Caramel Banana Porridge

 
 

This is the perfect brekkie for anyone with a sweet tooth. Caramelising bananas is so quick and easy, but instantly adds something a little bit special to my usual morning porridge.

Ingredients


120g oats
360ml milk
1 tsp cinnamon
3 bananas, sliced
1 tbsp coconut oil
3 tbsp maple syrup
Handful walnuts
Spoonful almond butter


Method


1.
Pour the oats and milk into a saucepan and bring to a gentle simmer until thick and creamy, around 10 minutes. Add in more milk, if needed. Sprinkle in some cinnamon and stir.

Meanwhile, heat the oil in a non-stick frying pan and pour in the maple syrup. Once it is starting to bubble, place the banana slices gently into the pan. After 3 minutes, turn the slices over and fry for a further 3 minutes.

3.
Stir some of the bananas through the porridge oats, and save a handful to sprinkle on top, along with crushed walnuts and a drizzle of almond butter.
