Black Bean & Quinoa Stew
A warming, filling and delicious stew that you can make in one single pot. Great for getting those plants into your diet, lots of fibre to feed your gut! It is so easy to make and combines different layers of flavour to create a healthy and vibrant spread.

Ingredients
2 tbsp olive oil
1 large onion, diced
2 medium peppers (red and orange), diced
2 tbsp tomato paste
1 tbsp dried oregano
½ tsp chili powder
2 tsp ground cumin
2 tsp smoked paprika
1 can (400g) of chopped tomatoes
1 can (400g) of black beans
240g of sweet corn
128g dried quinoa
450ml of vegetable stock
Toppings: Coriander and avocado
Method
1.
In a large pot, warm the olive oil and add the onion, a pinch of salt and cook 5 min until soft

Add peppers, spices and tomato paste and cook for 5 more minutes

Add the chopped tomatoes, vegetable stock black beans, corn, quinoa and stir

Bring to boil and then reduce to simmer, cook until water is absorbed, and quinoa is cooked. Add extra salt to taste and stir to fluff.

Serve with avocado slices, coriander and even some sour cream if you want
