Sweet Potato Fritters
A fantastic way to sneak in a variety of veggies, these fritters are a real winner for a younger crowd and can be batch-cooked and frozen for ultimate ease later on!

Ingredients
2 peeled and grated sweet potatoes
1 large egg
1 tbsp of harissa paste
Salt and pepper
1/2 avocado sliced
Cherry tomatoes on the vine (1-2 vines)
Olive oil
Method
1.
Place your tomato vines over a baking tray and drizzle with olive oil, salt and pepper. Bake at 180C for 15-20 min

Mix the grated sweet potatoes with the egg, harissa paste, 1/2 tsp of salt and pepper
3.
Scoop over a hot pan and fry for a few minutes at low-medium temperature until golden on both sides
4.
Pile the fritters on a plate and serve with avocado slices on the top, and baked tomatoes on the side
