Blackberry Overnight Oats
Jazz up your early starts with this bright purple delight! I love whizzing up berries with my porridge, it’s such an easy way to pack in extra nutrients and sweet flavour! Refrigerate overnight in a sealed jar and breakfast is ready and waiting for you as you rush out the door - as convenient as it is delicious!

Ingredients
120g oats
300ml milk (oat works well)
150g blackberries
180ml yoghurt (Greek or soy)
2 tbsp chia seeds
Chopped nuts
Method
1.
Mix together half of the oats with the milk, until well combined. Leave aside.
2.
In a blender, blitz together the blackberries and the yoghurt, until smooth and bright purple.
3.
Pour the blended mixture into a bowl, and mix in the chia seeds and the other half of the oats.
4.
Pour the plain oat mixture into two mason jars, and top with the blackberry mixture.
5.
Seal the jars, and place in the fridge overnight to soak. Enjoy in the morning topped with nuts and blackberries!
