Cherry Almond Bites
Calling all Bakewell lovers! This cherry & almond combo with a gooey almond caramel centre is a deliciously irresistible sweet snack, with a flavour bringing back memories of the British classic!

Ingredients
90g rolled oats
30g ground flaxseed
60g flaked almonds
90g dried cherries, chopped
30g dark chocolate, chopped
4 tbsp almond butter
4 tbsp honey / maple syrup
1 tbsp coconut oil, melted
10 medjool dates, pitted and chopped
Pinch salt
50g dark chocolate, melted
Method
1.
Add the oats, flaxseed and almonds to a food processor and blend for 20-30 seconds, until broken down to a chunky flour, but not too fine.

In a mixing bowl, combine with the dried cherries, dark chocolate, 1 tablespoon of almond butter and 1 tablespoon of honey or maple syrup, mixing well until it forms a sticky flapjack-like consistency.

Spoon the mixture into a lined square baking tray, pressing it down until it is around 1cm thick, and smooth over with a spatula. Place in the fridge to set for at least 1 hour, while you make the almond filling.

To make the almond filling, add 3 tablespoons of almond butter, 3 tablespoons of maple syrup, the coconut oil, dates and salt to the food processor and blend until it forms a smooth, thick paste.

When the sandwich bar mixture has set, cut it in half down the middle with a sharp knife, layer the almond butter mixture over one half evenly, and then place the other half on top.

Cut into 12 bite size pieces, drizzle with the melted dark chocolate, and enjoy immediately or store in the fridge for up to a week!
