Veggie Muffins

 
 

The perfect pick-me-up, packed full of veggies, these nutritious muffins are my new favourite savoury bake, and great for all ages.

Ingredients


225g self-raising flour
1/2 tsp baking powder
50g olive oil (plus extra for greasing)
1 large egg
175ml milk
Pinch of black pepper
100g feta cheese, crumbled
½ small courgette, grated
½ red pepper, chopped into small cubes


Method


1.
Preheat the oven to 180°c fan assisted/200°c/gas 6 and grease a 12-hole muffin tin with a little olive oil.

Add the self-raising flour, baking powder, olive oil, egg, milk and black pepper into the KitchenAid food processor jug. Blend on medium until just combined, being careful not to over mix.

Remove the blender jug from the stand and add the feta cheese, grated courgette and red pepper. Use a wooden spoon to combine the mix, then divide evenly between the 12 holes in the muffin tin.

Bake in the oven for 20-25 minutes, or until risen and golden.

Let them cool slightly before removing from the tin. Serve warm or cold.
