Blueberry and Chia Pancakes

 
 

These delicious blueberry and chia seed pancakes are high in protein, antioxidants and gut friendly fibre.

Ingredients


2 eggs

3 tbsp greek yoghurt

1 tbsp honey

150ml milk of choice

2 tbsp chia seeds

200g wholemeal flour

tsp baking powder

pinch of salt

Topping:

Zest and juice of 1 lemon

2 tbsp kefir yoghurt

Blueberries


Method


1.

Combine wet ingredients. Add dry ingredients and combine.

2.

Preheat large pan over medium low to medium heat.

3.

Melt 1 tablespoon butter onto pan or spray pan with cooking spray. Add even scoops of pancake batter to the pan.

4.

Once cooked on both sides, transfer to a plate.

5.

While your pancakes cook, mix together all of the topping ingredients besides the blueberries.

6.

Once all the pancakes are cooked, stack and top with the yoghurt. Sprinkle blueberries and serve.
