Hidden Veggies Cottage Cheese Bread

 
 

This delicious veggie filled loaf is the perfect way to sneak a few extra plant points into your day! High in protein, fibre and beneficial antioxidants, it’s a must try.

Ingredients


200g grated carrot

200g grated courgette (squeezed to take out liquids)

200g oats

300g cottage cheese

2 tbsp flaxseeds

70g mixed seeds

2 eggs

1/2 tbsp baking powder

1/2-1 tsp of salt (to taste)


Method


1.

Preheat your oven at 180C

2.

Mix all the ingredients in one bowl until well combined, use your hands if needed

3.

Form the dough into an oval loaf shape with wet hands on some baking parchment, pressing it firmly together. keep the loaf the same height throughout and not too thick otherwise this will

affect cooking times.

4.

Bake at 180°C for 60 minutes or more until cooked through.
