Chocolate Fig Bars
The combination of cocoa and sweet fig in this recipe creates a satisfying bite that feels so decadent despite how simple it is to create.

Ingredients
280g dates, pitted
3 tbsp (40g) coconut oil, melted
3 tbsp almond butter
40g cocoa powder
90g nuts of choice (I used cashews and hazelnuts, halved)
75g dried cranberries
3 fresh figs, thinly sliced
Method
1.
Pulse the dates, coconut oil, almond butter and cocoa powder in a food processor for a few minutes, until it forms a thick, smooth paste.

Combine the paste with the nuts and cranberries, mixing well to combine.

In a lined baking tray, press the mixture down to around 1.5 cm thick. Pop in the freezer for at least 2 hours to set. Remove from the freezer 30 minutes before serving to soften.

Decorate with the fig slices, before slicing into bars with a sharp knife. Enjoy immediately or store in the freezer for up to 2 weeks.
