DIFFICULTY EASY
Ingredients
180g flour
1 tsp baking powder
3 tbsp cocoa powder
150g dark chocolate, chopped into chunks
zest 1 orange
90g light brown sugar
90g butter (or margarine)
3 tbsp orange juice (freshly squeezed)
Pinch of salt
Method
1.
Preheat the oven to 180 degrees C.
2.
Sift the flour, baking powder and cocoa powder into a bowl, then mix in the chopped dark chocolate, salt and orange zest.
3.
In another bowl, cream together the sugar and butter (or margarine) with a fork until smooth. Gradually add in 3 tbsp freshly squeezed orange juice.
4.
Combine the wet mixture with the dry mixture and stir until well combined.
5.
Divide the dough into 12 cookies, keeping them very small and relatively thick as they will flatten and expand a lot as they bake. Place them on a lined baking tray, with plenty of space around each.
6.
Bake for 15-18 minutes, until cooked through evenly, but still a little gooey. Enjoy warm from the oven, or leave to cool and store for up to a week.
