Oaty Mince Pies

 
 

These mince pies are deliciously crumbly and juicy, and will bring joy to all of the family this Christmas, no matter their dietary choices!

Ingredients


1 apple, cored and diced
120g mixed dried fruit (raisins, sultanas, orange peel)
80g dried cranberries
2 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground nutmeg
Juice 1 orange
1 tbsp butter or coconut oil
120g ground almonds
100g oats
80g pecans
8 dates (about 200g)
2 tbsp coconut oil (or butter)
2 tbsp water
Pinch salt
Flour – for dusting the surface


Method


1.
Preheat the oven to 180°C

Place the apple, dried fruit, spices (only 1 tsp of the cinnamon, save the other for the crust), orange juice and butter / coconut oil in a saucepan. Stir to coat all the spices, and bring to a gentle simmer. Heat through for 15-20 minutes, ensuring it does not stick to the bottom of the pan. Add a dash of water carefully, if needed.

Meanwhile, start to make the oat crust. Place the ground almonds, oats, pecans, dates, coconut oil / butter, remaining teaspoon of cinnamon and salt in a food processor, and blend until a thick dough starts to form. Gently add the water, ensuring that the mixture does not become too sticky.

Roll the dough out on a floured surface, until it is about ½ cm thick. Cut 9 circles out of the mixture with a pastry cutter, and carefully place them inside 9 muffin cases, inside a muffin tin. Press down gently. Place the tray in the oven for 5-6 minutes and remove from the oven and leave to cool slightly.

Meanwhile, using a star cutter, cut the rest of the dough into small stars.

Spoon the mincemeat filling into each pie and pop a star on top. Put them back in the oven for around 7-8 minutes, keeping an eye out that they don’t burn, as they cook very quickly. Remove from the oven and leave to cool, before sprinkling with icing sugar.

Enjoy warmed up and served with ice cream, or these are tasty cold too! They will last well in a sealed container for up to 2 weeks.
