Rocky Road
These can be whipped up in next to no time and with ingredients you may already have in the cupboard.

Ingredients
75g digestive biscuits
50g any nuts you like
75g mini marshmallows
50g dried cranberries or raisins
100g butter
2 tbsp honey or golden syrup
350g dark chocolate, chopped into small pieces
Melted white chocolate, for drizzling (optional)
Method

Line a square brownie tin with parchment paper. Crumble the biscuits into a large bowl then add the nuts, mini marshmallows and dried cranberries. Give everything a mix, then set aside.

Combine the butter, honey/golden syrup and dark chocolate in a saucepan and stir gently over a low heat until melted. Remove the pan from the heat and allow it to cool for 5 minutes before pouring the mix over the dry ingredients. Stir well to coat everything in chocolate, then pour the mixture out into your prepared baking tin. Press it down gently, but not too much - you still want it to have a rustic looking surface!

Refrigerate the rocky road in the fridge for at least an hour, or until set. You can cut this rocky road up and serve it just as it is, or, to take it up a notch, drizzle in white chocolate, chop into slices, then serve!
