Granola Cups
This easy recipe will teach you how to make granola at home so you can skip the pricey shop bought kind.

Ingredients
145g porridge oats
75g nuts and/or seeds of choice
1 tbsp chia seeds
1 tsp cinnamon
Pinch of salt
1/2 a banana, mashed
2 tbsp melted coconut oil or butter
2 tbsp maple syrup or honey
2 tbsp milk (any you like!)
For The Filling:
9 large spoonfuls of greek or plant-based yoghurt
Fruit of your choice
Toppings of your choice; nut butter, nuts, seeds, coconut chips
Method

Preheat oven to 160°c (fan assisted)/180°c/gas 4 and grease 9 cups of a muffin pan

Mix together the oats, nuts and/or seeds, chia seeds, cinnamon and salt in a large bowl. Add the mashed banana, coconut oil/butter, maple syrup/honey and milk and stir until combined. Set aside for 10 minutes to allow the mix to thicken.

Divide the mixture between the 9 muffin cups and use your fingers to press down really firmly on the bottom and build the mix up along the sides to make a cup shape. Bake in the oven for 15-20 minutes, or until golden brown and hard. Allow to cool completely before removing from the pan.

When ready to serve, fill each cup with the yoghurt, then decorate with any fresh fruit and toppings that you like.
