Creamy Mushrooms On Toast

There’s nothing better than a slice of toast for breakfast but this one is extra special. Garlic and thyme fried mushrooms with creamy yoghurt makes for a quick and delicious toast topper.


SERVES 2
PREP TIME 2 MINUTES
COOKS TIME 10 MINUTES
DIFFICULTY SUPER EASY


Ingredients


1 tbsp olive oil
½ white onion, small dice
3 large garlic cloves, crushed
250g mushrooms, roughly chopped or sliced
1 tsp dried thyme
Salt and pepper
2 tbsp yoghurt
2-4 slices of bread, toasted
To serve: chilli flakes, fresh herbs


Method


1.
Heat some olive oil in a frying pan and add the onion and garlic. Cook for 5 minutes, stirring often and add in the chopped mushrooms and thyme.

2.
Season with salt and pepper and cook for 5-10 minutes until really soft.

3.
Just before serving, stir in the yogurt.

4.
Serve the mushrooms on toast topped with some chilli flakes and fresh herbs.
