These high protein egg bites are perfect for a mid-morning snack or lunchbox!

Ingredients


8 eggs

225g cottage cheese

Handful of veggies

Handful of spinach

100g cheese, grated

1/2 tsp salt

1/4 tsp pepper


Method


1.

Preheat your oven at 180C and grease muffin tin

Whisk together eggs, cottage cheese, salt, pepper and any herbs you may choose to add

Then, add in all of the chopped vegetables, spinach and cheese and give it another good mix.

4.

Divide the mixture evenly between the muffin cases, filling each almost to the top.

5.

Cook in the oven for around 20 minutes, or until a utensil inserted into the middle of the muffins comes out clean and the muffins have visibly puffed up.
