Ginger Prawn Stir Fry

 
 

When you want something comforting and ready in no time, a stir-fry is the ideal dish. This recipe packs a punch and full of fragrant flavours.

Ingredients


Sesame/Olive oil
2 cloves garlic, crushed
30g ginger, grated
2 tbsp soy sauce
1 tbsp honey
1 tbsp mirin
zest & juice 1 small orange
1 pack cooked prawns
2 red/yellow peppers, sliced
1 carrot, in ribbons (with a potato peeler)
100g sugar snaps
150g rice noodles
1 spring onion


Method


1.
Mix the garlic, ginger, soy sauce, honey, mirin, orange juice and zest in a bowl. Add the prawns and coat in the marinade mixture. Pop in the fridge for at least 20 minutes.

Cook the rice noodles according to packet instructions.

3.
Pour a little oil in a pan. Fry the peppers for 2 minutes, before adding the carrot ribbons.

4.
After 3 minutes, add the sugar snaps and the marinated prawns.

5.
Stir fry for 4 minutes, before adding the cooked rice noodles. Toss to coat.

6.
Serve topped with spring onions.
