Ice Cream Sandwiches
What a better way than ice cream sandwiches! Cookie ice cream sandwiches are fun and easy to make, and to make them even more exciting why not using rainbow cookies?

Ingredients
300g all-purpose flour
½ teaspoon baking soda
½ teaspoon fine salt
225g unsalted butter, softened to room temperature
60g brown sugar
50g powdered sugar
1 large egg
1 teaspoon vanilla extract
70g of sprinkles
1 tub of light ice cream
Method
1.
Mix the butter (softened) and sugar until we’ll combined, add egg and vanilla and beat again.

Add flour, baking soda, salt and mix until well combined. Finally fold the sprinkles and mix in your dough without over mixing.

Scoop over a baking tray lined with parchment paper, and bake for 12-15 min until golden.

Remove from the oven and let cool in the tray for a few minutes before transferring to a cooling rack

When the cookies are fully cooled, scoop one dollop of ice cream to half of the cookies and place un the freezer for 15-20 min
6.
Close the cookie sandwiches with the rest of the cookies and return to the freezer for at least 2 hours, you can also store them in a container or wrap them in plastic or paper bags.
