Italian Buddha Bowl
A bowl full of goodness and vibrancy. A delicious quick lunch especially during the warmer days, and can easily be adapted with other veggies and wholegrains that you have in your cupboards.

Ingredients
For the bowl:
1 cup of cooked quinoa
Handful of sliced baby cucumber, cherry tomatoes in quarters, finely chopped red onion, mini mozzarella balls, avocado in cubes
For the dressing:
3 tbsp of pesto
1 tbsp of extra virgin olive oil
Juice of 1/2 lime
50-80ml of water to loosen
Salt to taste
Method
1.
Mix up your dressing ingredients and set aside
2.
Spread a layer of cooked quinoa as a base of your bowl
3.
Add your toppings: onion, cucumber, tomatoes, mozzarella and avocado
4.
Finish with your pesto dressing and mix!
