Pesto Pasta Bake

 
 

Packed with greens and full of flavour, this quick and easy dish will be a winner with all the family. Any leftovers keep well and makes a fantastic lunch hot or cold!

COOKS TIME 25 MINUTES

Ingredients


200g of your favourite pasta (enough to fill the bottom of your baking dish)
1/2 tsp of garlic
Water, salt and pepper
1-2 cups of leftover roasted veggies
Handful of spinach
Handful of cheese
3 tbsp of pesto
Olive oil


Method


1.
Layer the pasta in the bottom of your baking dish. Cover with water and add garlic, salt, and pepper (at this point you could add raw veggies).

2.
Bake in the oven for 20 min at 180°C, add a drizzle of olive oil, pesto and any leftover roasted veggies and mix, top with cheese.
