Pimped Porridge
Sometimes the best porridge bowls look very plain and simple, but other times a little extra makes a basic porridge bowl into a luxurious brekkie! With all kinds of fruity toppings, this porridge bowl is packed with vitamins and fibre, and a small dose of healthy fats too.

Ingredients
3 handfuls of summer berries (I’ve used strawberries
raspberries)
90g oats
500ml milk (any kind you like)
1 tsp vanilla
To serve:
Mixed berries, mixed seeds & flaked almonds
Method

Begin by making the berry compote. If the berries are large, chop them into halves/quarters. Bring the mixture to a gentle simmer, then cook for 3-5 minutes, stirring regularly, or until the berries have broken down and thickened.

Meanwhile, combine the oats, milk and vanilla in a small saucepan over medium heat. Bring to a simmer, then stir regularly until the porridge reaches your desired consistency.

Divide the porridge between bowls and top with the berry compote and generous amounts of toppings. Enjoy!
