Plum & Ginger Porridge
This is a fantastic way to jazz up your usual bowl of oats. To save time in the morning, you can make the stewed plums the night before and reheat them along with your porridge. They are also delicious with yoghurt and granola!

Ingredients
85g brown sugar
1 orange, juiced
6 plums, de-stoned and quartered
90g oats
500ml milk (any kind you like)
1 tsp ground ginger
2 tbsp crystallised ginger, roughly chopped
Method

Begin by making the stewed plums. Combine the sugar, orange juice and 250ml of water in a saucepan. Bring the mixture to a simmer over a medium heat, then stir until the sugar has dissolved. Add the plums and stew for 15-18 minutes, or until they are soft but still keeping their shape.

Once the plums are ready, combine the oats, milk and ground ginger in a small saucepan over medium heat. Bring to a simmer, then stir regularly until the porridge reaches your desired consistency.

Pour the porridge out into a bowl and top with the stewed plums and crystallised ginger.
