Blackberry Crumble Muffins
To keep these muffins fresh, you can freeze them, then warm them up in the microwave whenever you fancy a sweet treat. They are also delicious when served with yoghurt!

Ingredients
100g unsalted butter, softened
140g soft light brown sugar
2 large eggs
150g natural yogurt
250g plain flour
1 tsp cinnamon
2 tsp baking powder
2 eating apples, chopped into cubes
100g blackberries
Handful of granola
Method
1.
Preheat the oven to 180°c fan assisted/200°c/gas 6 and line a 12-hole muffin tin with paper cases.

Cream together the butter and sugar until pale and fluffy. Add the eggs and yoghurt and mix until combined.

Gently fold the plain flour, cinnamon and baking powder into the wet mixture, being careful not to over mix. Finally, stir through the chopped apple and blackberries. Divide the mix between the muffin cases and top each one with a sprinkle of granola.

Bake for 18-22 minutes, or until golden and and a cocktail stick inserted into the centre comes out clean. Enjoy warm or cold.
