Quinoa Crunchy Chocolate

 
 

This rich and nutty chocolate quinoa bark is a perfect healthy snack to satisfy that sweet tooth. These bars are packed with fibre, plant protein, and a satisfying crunch, making chocolate healthy!

Ingredients


150g dark chocolate (>75% cocoa solids)

4 tbsp nut butter

125g popped quinoa


Method


1.

Break up the chocolate into small pieces and add to a heat-proof bowl. Microwave on high until melted, giving it a mix every few seconds to ensure it doesn't burn.

Add the nut butter and mix until smooth.

Add the quinoa to a pan on a medium heat and stir until it starts to pop.

4.

Fold the puffed quinoa into the chocolate mixture, then spread into a container or baking dish lined with parchment paper. Alternatively make small disks on a flat tray.

5.

Refrigerate until set and enjoy!
