Quinoa & Pear Porridge
Let's keep those Christmas spirits high with this festive warming bowl. You may have only tried quinoa with savoury dishes, but trust me, it’s delicious sweet too!

Ingredients
2 pears
1 tbsp maple syrup
1 tsp vanilla essence
Juice ½ lemon
1 cinnamon stick
2 star anise
4 cardamom pods
25g fresh ginger
160g quinoa
1 tsp cinnamon
320ml milk
(Cashew works well for a thick and creamy texture)
Method
1.
Peel and halve the pears.

Fill a saucepan with 500ml water. Bring to the boil, adding in the maple syrup, vanilla essence, lemon juice and spices.

Once bubbling, pop in the pear, making sure it is fully covered by the liquid.

Place over a sheet of baking parchment while it simmers, to ensure it cooks evenly. Simmer for 10-12 minutes, until the pear is soft.

Meanwhile, cook the quinoa according to packet instructions. Once it has cooked fully and the water has boiled off, pour in the milk and cinnamon, stirring well. Simmer for another 5 minutes until the quinoa has started to absorb the milk, but it is still thick and creamy. Add more milk if required.
6.
Serve the porridge with the poached pear and a handful of blueberries, drizzled with some maple syrup!
