Cottage Cheese Pancakes

 
 

These high protein, delicious pancakes are the perfect breakfast for the whole family. Top with your favourite summer berries and enjoy!

Ingredients


1 banana

1 big tbsp of cottage cheese

2 heaped tbsp of plain flour

1 egg

1/2 tsp baking powder

To serve: yoghurt, maple syrup and berries


Method


1.

Mash the banana. Mix with an egg and cottage cheese until combined. Fold in the flour and baking powder.

2.

Heat a nonstick frying pan over a low/medium heat, spoon the mix to form small equal sized pancakes.

3.

Cook for 3 minutes. Flip and cook the other side for 2-3 more minutes.

4.

Pair with yoghurt, a drizzle of maple syrup and fresh berries.
