Pollock Burgers

 
 

These delicious pollock burgers are full of omega-3 fatty acids, great for our heart and brain health. With their high fibre salad topping, not only do these burgers pack a nutritional punch - they’re super tasty!

Ingredients


4 Pollock Fillets

3 Cloves Garlic

50 g Ginger

2 tbsp Mayonnaise or Greek yoghurt

21⁄2 tbsp Gochujang

1⁄2 Lemon

70 g Breadcrumbs

1⁄2 Red Cabbage

1 carrot

1/2 lemon

Cheddar cheesr

4 seeded wholemeal Buns

Lettuce leaves

Olive Oil


Method


1.

Grate your garlic and ginger into a bowl. Add 2 tbsp Greek yoghurt or mayo, 2 tbsp gochujang and a squeeze of lemon. Mix and set aside.

Fry your pollock until white in colour (for about 2 minutes).

3.

Place in a bowl and roughly break it up. Add your breadcrumbs and sauce then mix so that the fish is fully coated.

4.

Take a handful of this mixture and mould into a patty shape and fry.

5.

Slice your red cabbage and add to a bowl along with your carrot in ribbons.

6.

Add remaining greek yoghurt, lemon juice and a pinch of salt and mix it through.

7.

Then, cut your buns in half and add cheese, toast in the grill.

8.

Take the base and add lettuce, followed by your patty, then a generous handful of cabbage mix. Pop your bun on top and enjoy!
